Big John McCarthy is an instantly recognisable figure in the middle of the Octagon having been around since UFC 2 (although he did have a brief retirement to pursue a career as a commentator for The Fight Network), and is regarded as one of the most well respected referees in the sport of mixed martial arts.
Having seen and and adjudicated an uncountable amount of fights, Big John knows a thing or two about what goes on once that octagon door closes, but he explained to MMAJunkie.com that he can't watch fights the same way that the fans do:
